Tahitian Vanilla Bean and Black Sea Salt

Last few months we used Ugandan Vanilla beans in our Vanilla Bean + Black Salt bar and now we transitioned to Tahitian Vanilla beans.  They blend well with our chocolate, by producing a more floral heady note.  The general tasting notes of Tahitian vanilla beans are cherry, licorice, and caramel.  In general, when we grind our cacao nibs with whole vanilla bean pods (we don't just scrape out the seeds), it sweetens the bar. Tastes like a 75% Cacao bar, but it’s an 85% cacao. A fan of extra dark? This is for you!

Our Cacao Beans are Different

We use an old technique called the Mayan method where the beans are less acidic and less bitter while maintaining a higher level of antioxidants. Taste the difference.

Our beans are specially fermented for less than 3 days. This creates less acidity. Research has shown that less days of fermentation means more flavanols are maintained in the chocolate.
