A Night of Chocolate Tortilla Tacos and Spiked Champurrado

Join us for a night of chocolate, maize, tortillas, history, holiday fun and drinks! 
You may have caught word of our Heirloom Cacao Tortillas (available for pre-order), but this event is one for the books! We will be serving up our Chocolate Tortillas with mole and your choice of veggies or meat and Spiked Champurrado. 
Champurrado is a chocolate-based atole, a warm and thick Mexican drink, prepared with our stone-ground heirloom masa and organic cacao!
Come learn about nixtamalization, the significance of corn and cacao in ancient Mayan and Mexican culture and history, plus experience our modern adaptations of ancient tradition.
$30 per person.  Includes:
  • Warm spiked Champurrado drink.
  • Two Cacao Tortilla Tacos (choose veggie, cheese or chicken).
  • Cacao Fruit as a refresher on the side with smoked salt & nibs on top
  • Attendees under the age of 21 or those who do not drink can still purchase tickets and will be served non-spiked Champurrado.

The Tasting will include three different Partida Tequilas, a specialty cocktail made with Partida Tequila and four carefully paired chocolate tasting squares. PLUS, the debut of our Stone-Ground, Heirloom, Organic Cacao Masa Tortillas! Learn all about Agave, Cacao and Maize with us!

7:30 PM - 8 PM is an introduction by Partida and Patricia as to the making of the tequila and chocolate. From 8 PM - 10 PM we will also be hosting Live Jazz from two very talented Los Angeles locals!

You can come anytime from 7 PM - 10 PM to enjoy your tasting.

A Partida Tequila Ambassador will be here with us to tell us about their Tequila made only from Blue Agave grown in Tequila, Mexico. Partida's Reposado and Añejo are aged in American whiskey barrels to develop aromas of vanilla, almond, dried fruits, and a long-lasting finish.

Cacao & Chocolate Sensory Experience

Prepare for a sensory maze containing a series of unique experiences and discover flavors designed to test your senses to the max.

The Sensory Experience is fully immersive. After a brief meditation to focus the mind and enhance the olfactory and gustatory connection, she will guide you through a series of aromatic and tasting encounters designed to expand perception of flavor.
 
You'll learn how to identify different flavor profiles and you'll learns secrets toworking with chocolate that you can do at home that you didn't think was possible such as smoking and infusing cacao in food.  

Due to time constraints and turnout of event, some attendees might not be able to receive the hands-on experience.  It is advised to attend both events as information covered in Part 1 is a continuation to Part 2.  . 

Attendees will have the opportunity to explore this theme by tapping into their senses.  Can you tell the difference between cacao %?  What is the difference between bean type and how will fat affect the flavor of your product?  What is Mexican Chocolate vs Conventional Chocolate that is used by 99% of the world? How is the meltability factor and flavor different?  Can you tell the difference between varietal of nibs?  Lastly, how do you make a savory dish with chocolate besides just a mole?  All these topics will be explored so come for a fast and wild ride for a sensory overload of chocolate and cacao.

Level 1: History of Chocolate and Drinking Chocolate

An Interactive Experience of 5 Senses

This kids course is a great introduction to the basics of cacao, drinking chocolate, its history and the chocolate many have come to know today! But we believe chocolate is so much more than candy. Understanding its origins and history can open young minds to the possibilities of cacao and chocolate as well as many other ingredients, foods and treats they know of.

Class Structure & What’s included

Class begins with a guided Rainforest Visualization.  Kids get a chance to pass around and see actual cacao pods, beans and nibs to establish a real and physical relationship with the beginnings of where chocolate comes from!

Next, they learn about the history of chocolate beginning with the Mayans, Olmecs and Aztecs, and then the Europeans who developed their own, very different methods of chocolate making and consumption. Kids will get to taste-test the difference between the methods!

Finally, students will learn how to and make their very own hot chocolate using traditional Mesoamerican Methods!

Each student will get a specialty hot chocolate package to take home to share their newfound knowledge with family and friends! Additional hot cocoa packets can be purchased at a discounted rate for those who attend the class.

Level 2: All About Chocolate and Baking Chocolate

A Brief History, Cookies, Cupcakes and Brownies, Oh My!

In this kids course students will learn the basics of cacao, how chocolate is made and how to make and bake recipes with chocolate! Students will get hands-on experience with the techniques and tricks of chocolate melting, incorporation and baking. As chocolate can be used in a variety of ways, it can also come together with other ingredients to create tasty treats greater than the sum of their parts! Students will learn baking techniques that can be applied to any baking recipes, but especially those requiring chocolate, cacao, and cocoa butter! Each student will make their own brownies and cupcakes, yum!

Class Structure & What’s included

A brief familiarization with cacao, chocolate, and history of cacao gives the students a foundation in the ingredients and processes that make baking with chocolate possible! Kids get a chance to pass around and see actual cacao pods, beans and nibs to establish a real and physical relationship with the beginnings of where chocolate comes from!

Students will get to taste-test the difference between traditional stone-ground chocolate and European style chocolate to kick off the baking extravaganza! We believe that a recipe can easily be elevated when proper and quality ingredients are used. Even when combining ingredients to make something new, preserving the basic nature of each flavor creates something even more beautiful and tasty!

The chocolatiers/bakers-to-be will then learn how to melt chocolate to make scrumptious chocolate desserts from Cupcakes, Brownies, Cookies and Frostings from scratch! Learning how to make these various confections is all about portion, order of mixing and the process and technique of each step. When their hand-made treats are in the oven and resting, we will play Mayan and Aztec inspired games. Finally, students will learn how to frost and decorate their delicious creations!

Bring-Your-Own-Container: Each student will need a container to take home any left-overs and tasty treats to share with friends and family!

Level 3:  Bean-to-Bar Chocolate Making

with Chocolate Mastermind Patricia Tsai

$150 for 2 - 2.5 hours (Depending on class size)

This course is very close to our hearts as it teaches youth the traditional Mayan processes we use to make our single-origin stone-ground chocolate. Chocolate Maker and Expert, Patricia Tsai, will teach kids where chocolate comes from and the process starting from the tree-to-pod to bean-to-bar. At the end each child will get to make and take home their very own custom bar!

Class Structure & What’s included

We open with a brief history of cacao and chocolate all the way back to the Mayan and Aztec people of Mesoamerica. Kids will be passing around and examining the various components of chocolate, starting with opening up a fresh cacao pod and seeing it with their very own eyes! They will learn to establish a real and physical relationship with the beginnings of where chocolate comes from and being immersed in a jungle. They will then taste-test the difference between European style chocolate and Mayan Stone-Ground chocolate and learn the difference between chocolatier and chocolate maker.

Students will get hands-on experience with the traditional techniques and tricks of roasting, grinding and shaping chocolate bars. Each Chocolate Maker-to-be can choose the various ingredients they want to include in their very own custom chocolate bar! While the fresh bars set we will play Mayan and Aztec inspired games like back over 2000 years ago.

Specialists from ChocoVivo and Common Space Brewery sat down and picked the best pairings of locally made chocolate with fresh local beer.

The event is open from 6-9 pm with tickets only, but a formal tasting session will take place at 6pm with our head brewer, Kushal, and the head chocolate maker at ChocoVivo, Patricia.

The formal tasting will be followed by a live Q&A with Kushal and Patricia.
