Our Full Spectrum Cacao Powder differs from our Cacao Powder (AKA Cocoa Powder) in that it is full fat, full flavor and minimally processed.
ChocoVivo Full Spectrum Cacao Powder has not been separated from its natural fat content (40% – 50% natural cacao butter) versus our Cacao Powder (AKA Cocoa Powder) which is cold pressed and separated from the Cacao Butter or fat solids. But the fat content inside cacao contains oleic acid -a heart-healthy monounsaturated fat also found in olive oil- that studies have shown to reduce inflammation and lower cholesterol.
Our Full-Spectrum Cacao Powder is made by simply stone-grinding Cacao Nibs until they become smooth, pouring out of the grinder as a beautiful, wet waterfall of chocolate. This cacao liquor is then allowed to set and harden. Once solidified, it is ground down into powder form. Or in more simple terms: Chocolate bars ground into powder form.

Our beans are specially fermented for less than 3 days. This creates less acidity. Research has shown that less days of fermentation means more flavanols are maintained in the chocolate.
