Also known as “Porcelana” because of the white center, Criollo is the rarest and hardest to cultivate of the three varieties of cacao beans. The white creamy center of the Criollo bean indicates a higher fat concentration with fruiter notes. A wonderful buttery mouth-feel with no added cacao butter, Criollo bean chocolate is natures own healthy and additive free milk chocolate. Most Porcelana bars are ultra-refined. We stone-grind our Criollo nibs so you can taste the beauty of the Criollo bean, without filling your body with processed unnatural additives.

Our beans are specially fermented for less than 3 days. This creates less acidity. Research has shown that less days of fermentation means more flavanols are maintained in the chocolate.
