Introducing our new line of smoother chocolate made with the same type of beans from our plantation in Tabasco, Mexico at our Jesus Maria plantation.  These five bars reflect the best of something dark, something sweet, and an introduction to cacao varietals with the highly-prized Criollo variety.  Also in this collection are two bars with coconut sugar including a coffee crunch bar with coffee coming from the famous coffee region of Chiapas in Mexico.  The coffee adds a nice itty bitty crunch to every bite.

OUR CACAO BEANS ARE DIFFERENT

We use an old technique called the Mayan method where the beans are less acidic and less bitter while maintaining a higher level of antioxidants. Taste the difference.

MINIMALLY FERMENTED >LOWER ACID >MORE ANTIOXIDANTS

Our beans are specially fermented for less than 3 days. This creates less acidity. Research has shown that less days of fermentation means more flavanols are maintained in the chocolate.

High in antioxidants – typical serving size of cacao has more antioxidants than blueberries, red wine, and green tea.
