Each bar begins with sun-dried cacao beans, carefully roasted over Maya jungle wood to enhance its deep, complex flavors. These beans are then stone-ground with cinnamon and almonds, resulting in a unique, grainy dark chocolate texture with subtle smoky notes.
What makes this bar truly exceptional is the addition of naturally grown Amashito chilies from our cacao plantation. These chilies are slow-roasted to perfection, adding a warm, spicy kick that balances beautifully with the organic cacao. Our beans are specially fermented for less than 3 days. This creates less acidity. Research has shown that less days of fermentation means more flavanols are maintained in the chocolate.
